
As members of the Lake Itasca Region Pioneer Farmers (LIRPF), our duties include the baking of two pies to sell at the annual threshing show, coming right up this weekend. Today was the pie-baking day, and the outcome was one Dutch apple and one pecan. Now the pecan… Oh, the pecan! The recipe, handed down from my mom’s adopted grandfather, is typed out on an old bit of paper, the smudges and stains attesting to its repeated use. This pie gets rave reviews from Grandma, various Aunts and Uncles, and Dad (if you don’t know Dad, let me just tell you, you should be feeling mighty impressed!). Now, I can’t guarantee such amazing results and astonishing accolades for everyone. Mom has a special touch, a mysterious sixth pecan-pie-sense. But, when asked for her secret, she says, “I just follow the recipe,” — and I’ll leave you with the same advice.
Pecan Pie
Ingredients:
1 cup light corn syrup
1 cup dark brown sugar
1/3 cup butter, melted
3 large eggs
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1 heaping cup pecan halves
1 unbaked pie crust, placed in pan, with the edges finished your favorite way.
Directions:
1. Preheat the oven to 350 degrees F.
2. Melt the butter in a saucepan. Whisk in the corn syrup, brown sugar, eggs, vanilla and salt until well blended.
3. Scatter the pecans over the bottom of the unbaked pie crust. Pour the egg mixture over the pecans.
4. Bake for 45 to 50 minutes. Cool and serve with whipped cream or ice cream.

Dad’s so funny. The first day of the Show, he bought up all my pecan pie, as well as Grandma’s peach pie. The “Powers That Be” wouldn’t sell him the whole, uncut pies, so he had to buy ‘em, “One piece at a time…”

This recipe looks great! I have all of the ingredients in my pantry right now except pie crust. With 3 inches of snow and 6 more on the way I guess I will have to wait until I can reach a grocery store.
